Salad with grilled vegetables

INGREDIENTS

For the vinaigrette you will need

  • 2 tablespoons of balsamic vinegar
  • 1 tablespoon of olive oil
  • 1/2 teaspoon raw salt
  • 1 1/2 teaspoons of honey
  • 1/2 teaspoon mild mustard
  • 1/4 teaspoon freshly ground black pepper

For the Salad you will need

  • 170 grams of mushrooms
  • 1 medium zucchini, cut lengthwise
  • 1 yellow pumpkin, cut lengthwise
  • 1 small red onion, chopped
  • 1 red pepper, cut in half

INSTRUCTIONS

For the vinaigrette:

Mix the first 6 ingredients in a large bowl and set aside.

 

For the salad:

Spray the mushrooms, squash, pumpkin, onion and pepper with olive oil.

Put the vegetables on the grill and cook for 4 minutes on each side.

Remove the vegetables from the grill and let them cool.

Cut the vegetables.

Pour over the vinaigrette and toss.
