INGREDIENTS
- 1 cup of quinoa (white or in different colors)
- 1 onion, chopped
- 4-5 small onions, chopped
- 1 red pepper, chopped
- 3 carrots, diced
- 3 zucchinis, diced
- 3 peppers of different colors
- 3 tomatoes
- Salt and pepper
- Garlic powder
- Juice from 1 lime
- ½ bunch of chopped parsley
- Olive oil
INSTRUCTIONS
Boil the quinoa in salted water.
Cut off the top of each tomato and remove its pulp.
Cut off the top of each pepper and remove the seeds.
In a frying pan sauté the onion, carrots, zucchinis and red pepper. Sprinkle pepper and salt and add the rest of the spices.
In a separate bowl mix the tomato pulp with the cooked vegetables and the quinoa. Add the lime juice and the parsley and mix.
Stuff the tomatoes and the peppers with the mixture from the bowl.
Place them in an oven pan, cover with their tops, sprinkle with olive oil, salt and pepper.
Bake in a preheated oven at 170 C for 20-25 minutes.
