INGREDIENTS
- 200 gr of boiled chickpeas
- 1 eggplant, diced
- 2 zucchinis, sliced in 4
- 1 medium onion, sliced in thin rings
- 1 cup of cauliflower
- 2 carrots peeled and cut in thick pieces
- 2 spoons of almonds
- Salt and pepper
- 1 teaspoon of turmeric
- Some white wine
- Some olive oil
INSTRUCTIONS
Preheat the oven at 180 C
Add all of the ingredients in a large bowl and mix well. Let them marinate for about half an hour and mix again.
Place them on an oven pan over baking paper. Bake for 20 minutes.
Remove them from the oven and mix them with a spatula. Bake again for 25 more minutes.
