INGREDIENTS
- 350 gr. medium beans, soaked overnight
- 1 onion, grated
- 2 cloves garlic, grated
- 1 tsp. tablespoon fresh ginger, grated (optional)
- 700 gr. white mushrooms, sliced
- 4 tomatoes, grated
- 4 bell peppers, diced
- 70 ml olive oil
- Salt Pepper
INSTRUCTIONS
Boil the beans in plenty of salted water for about 30-40 minutes or until they are semi-soft and strain them.
In a wide saucepan, heat the olive oil over high heat and sauté the onion, garlic and ginger, stirring, for 3-4 minutes.
Add the mushrooms and sauté for 3-4 minutes.
Add the tomatoes, peppers, salt, pepper and 250 ml of hot water.
When it boils, add the strained beans, cover the pot, lower the heat and simmer for about 30 minutes. If necessary, add a little hot water.
Check the salt and pepper, remove from heat and serve.
