INGREDIENTS
- 600 gr eggplants, sliced
- 120 gr olive oil
- 150 gr onion
- 20 gr garlic
- 350 gr of tomato sauce
- 8 gr thyme
- 80 gr feta cheese
- 50 gr graviera cheese, trimmed
- Salt and pepper
INSTRUCTIONS
Slice the eggplants, grate the cheese and chop the garlic and the thyme.
Sprinkle eggplants with salt and pepper.
Sauté the eggplants in some oil, on both sides until tender.
Add the onion and the garlic.
Add the tomato sauce, thyme and cook for 5 minutes.
In a small Pyrex add the tomato sauce, the eggplants and the grated cheese. Bake for 15 minutes at 180 C.
