Chicken with green beans

INGREDIENTS
  • 1 cup of olive oil
  • 1 kg of chicken, diced
  • 2 small onions, trimmed
  • 3 garlic cloves
  • 4 ripe tomatoes, trimmed
  • 4 tablespoons of tomato paste
  • 1/2 teaspoon of cinnamon
  • 1 kg of green beans
  • 1/2 bunch of parsley, chopped
  • salt and pepper

INSTRUCTIONS

Add the olive oil in a pot and sauté the chicken for 3-4 min -flipping the meat to make sure it is sautéed evenly.

Add the trimmed onions and sauté for another 2-3 minutes.

Add the garlic sauté for 1-2 more minutes.

Add the tomatoes and the paste. Lower the temperature and add the cinnamon.

Add the green beans and mix. Cover with water and boil over low temperature for 1 hour. Towards the end, add parsley, salt, pepper and serve.
