Oven omelet with mushrooms and vegetables

INGREDIENTS
  • 3 eggs (1 whole and two egg whites)
  • 1 teaspoon baking powder
  • 2 tablespoons olive oil
  • 100gr cut mushrooms
  • 2 slices low-fat cheese
  • 1 cup cut leek
  • 1/2 corn
  • 1 teaspoon dill
  • Salt and pepper

INSTRUCTIONS

In a frying sauté one spoon of olive oil, the leek, the mushrooms and the onion for 3-4 minutes and we remove them when they are cooked.

In another bowl, beat the eggs add the baking powder and beat for another 1-2 minutes.

Add the cheese, the corn, the dill, salt, pepper and the two previous mixtures and stir.

Preheat the oven at 200C. Grease a baking pan with some olive oil, add our omelet mixture and bake for 25-30 minutes.
