Oven omelet with zucchinis

INGREDIENTS
  • 8 eggs
  • 1 tablespoon of parsley leaves, chopped
  • 2 large red peppers, chopped
  • 1 green pepper, chopped
  • 3 trimmed zucchinis
  • Olive oil
  • Salt and pepper
  • 150 gr of grated feta cheese

INSTRUCTIONS

In a bowl, beat the eggs with the parsley, salt and pepper.

In a big frying pan add the peppers and the zucchinis and sauté for 3-4 minutes until they soften. Add the egg mixture and cook for 3 minutes until the omelet thickens.

Preheat the oven in the grill option. Pour the mixture in an oven pan and bake for 10 minutes.

Add the feta cheese and serve.
