INGREDIENTS
- 50 gr of olive oil
- 1 white onion, cut in large pieces
- 2 cloves of garlic, sliced
- Fresh thyme
- 250 gr of rice
- 150 ml of white wine
- 1 liter of water
- 1 cube of vegetable broth
- 1 kg of spinach
- Salt and pepper
- Juice from 2 lemon
INSTRUCTIONS
Add olive oil in a large heated pan and put in the onion. Then, add the sliced garlic and the thyme. Stir and when the onion turns yellow, add the rice and continue stirring.
Pour in the wine, wait for it to evaporate and then stir and add the water and the broth. Lower the heat and cook for 15-20 minutes.
Put the spinach in a bowl, add salt and mix with your hands.
Boil the spinach in a large pot, adding it gradually, over medium-low heat. Continue stirring.
Add the zest and the juice of 2 lemons.
At this point, check if you need to add more salt, pepper and lemon.
