INGREDIENTS
- 1/3 cup of olive oil
- 2 peppers of different colours
- 2 medium-sized onions, thinly sliced
- 1 small cabbage or half a big one, cut in large pieces
- 1 full spoon of tomato paste
- 1 cup of chopped tomatoes
- 1 cup of Carolina rice
- 2 cups of warm water
- Juice from 1 lemon
- Salt and pepper
For serving
- Chopped parsley and dill
- A bit of olive oil
- Yogurt or trimmed feta cheese
INSTRUCTIONS
Sauté the onion in olive oil. Add the chopped cabbage and the peppers. Sauté for a few more minutes until the mass of the cabbage is reduced to half.
Add the chopped tomatoes and 3 cups of warm water. Boil over medium heat for 10 minutes.
Then, add the rice and some salt and pepper. Boil for 15 minutes.
Finally, add the juice from 1 lemon and sprinkle the cabbage rice with some olive oil.
