INGREDIENTS
- 4 slices of whole wheat bread
- 1 tablespoon of mustard
- 2 large lettuce leaves
- 1 cucumber, thinly sliced
- 1 carrot, thinly sliced
- 4 radishes, thinly sliced
- 1 avocado slices
- large handfuls of finely chopped cabbage
For the chickpea salad
- 1.5 pints of boiled chickpeas
- 1/4 cup chopped parsley
- 1/4 cup chopped dill
- 2 spoons of whole grain mustard
- 1-2 tablespoons of light mayonnaise
- Salt
- pepper
INSTRUCTIONS
Make the chickpea salad by placing all the ingredients in a bowl, mix and mash with a fork until smooth.
For sandwiches, spread some mustard on the bread.
Put the vegetables and a large amount of chickpea salad.
