Sandwich with chickpea salad

INGREDIENTS
  • 4 slices of whole wheat bread
  • 1 tablespoon of mustard
  • 2 large lettuce leaves
  • 1 cucumber, thinly sliced
  • 1 carrot, thinly sliced
  • 4 radishes, thinly sliced
  • 1 avocado slices
  • large handfuls of finely chopped cabbage

 

For the chickpea salad

  • 1.5 pints of boiled chickpeas
  • 1/4 cup chopped parsley
  • 1/4 cup chopped dill
  • 2 spoons of whole grain mustard
  • 1-2 tablespoons of light mayonnaise
  • Salt
  • pepper

INSTRUCTIONS

Make the chickpea salad by placing all the ingredients in a bowl, mix and mash with a fork until smooth.

For sandwiches, spread some mustard on the bread.

Put the vegetables and a large amount of chickpea salad.
