INGREDIENTS
- 2/3 cup olive oil
- 2 cups of wheat flour type 0
- 2 1/2 teaspoon of baking powder
- 1 teaspoon of salt
- 1/2 cup of white sugar
- 1/2 cup of brown sugar
- 1 large lemon
- 2 large eggs, in room temperature
- 2 1/2 cups of grated zucchini
- 1 cup of crushed roasted walnuts
- 2 teaspoons of sesame seeds
INSTRUCTIONS
Preheat the oven at 180C.
In a large bowl, mix the flour, the baking powder and the salt.
On a second bowl, mix the brown sugar with the white sugar and add some lemon zest. Add the eggs and the olive oil. Mix until homogenous. Add the zucchinis and the walnuts.
Oil two cake pans, pour in the mixture and sprinkle with sesame.
Bake them for about 35-40 minutes.
Cool for 10 minutes and serve.
