Sweet potato soup

INGREDIENTS
  • 400g sweet potatoes
  • 1 carrot
  • 1 onion
  • 3 tsp. olive oil soup
  • 1 tsp. sweet ginger, grated
  • 1 tsp. sweet turmeric
  • ¼ tsp. sweet cumin
  • 850ml homemade or refrigerated vegetable broth
  • 20ml light butter
  • Salt Pepper

INSTRUCTIONS

Wash, dry and cut into medium pieces all the vegetables. Then in a pot saute the vegetables for 2-3 minutes, stirring constantly.

Then add the ginger, turmeric, cumin, pepper and vegetable stock and stir. Boil for 20 minutes.

Then, with a blender, puree the soup in the pot. Add the butter to the soup and, if necessary, add salt or pepper.
