Club Sandwich with salmon

INGREDIENTS
  • 6 tbsp yogurt sauce
  • 5 tbsp fresh basil, chopped
  • 3 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 4 salmon fillets
  • 8 slices of turkey
  • 8 slices of wholemeal bread
  • 8 tomato slices
  • 8 lettuce leaves

INSTRUCTIONS

Mix the yogurt sauce with 2 tbsp. basil.

Stir in the remaining 3 tbsp. basil, olive oil and lemon juice in a large glass pan. Add salmon to the oil mixture and leave the mixture in the refrigerator for 4 hours.

Prepare the grill (medium-high heat). Cook the salmon fillets until opaque in the center, about 3 minutes per side. Grill the bread until golden brown, about 2 minutes per side. Spread the yogurt sauce mixture on 1 side of the bread slices. Top each of the 4 slices of bread with 2 slices of turkey, 2 slices of tomato, 1 salmon fillet and 2 lettuce leaves. Cover with the remaining slices of bread.
