INGREDIENTS
- 500 gr. Butter beans
- 1 pint. olive oil
- 2 medium onions sliced
- ½ small cabbage chopped
- 1 bell pepper in rings
- 1 pint. chopped celery and parsley
- 2 cloves of garlic
- 1/2 fl. tomato juice
- 1 cube of vegetables
- Salt Pepper
- 4 tomatoes in slices
INSTRUCTIONS
Soak the Butter beans in water for 10-12 hours to swell.
Drain them well and boil them in water.
Heat the olive oil and saute the vegetables, except the tomatoes. Add the tomato juice, the cube, salt and pepper.
Pour the Butter beans and the rest of the ingredients into a fireproof glass container and mix. Then add the tomato slices.
Bake in a preheated oven for about 30 minutes. Let it cool a little and serve.
