INGREDIENTS
- 300 gr of peas
- 1/2 kg of potatoes, peeled and diced
- 2 medium sized dry onions, thinly sliced
- 2 garlic cloves
- 2 teaspoons of trimmed ginger or 1 teaspoon of ginger powder
- 1 tablespoon of turmeric powder
- 1/2 teaspoon of paprika powder
- 1 teaspoon of cumin
- 1 teaspoon of curry
- Leaves from 1 bunch of spearmint
- 80 ml of olive oil
- salt and pepper
INSTRUCTIONS
In a pot sauté the onions, the garlic and the ginger for 3 minutes in some olive oil -until they soften. Add the potatoes, the turmeric, the paprika, the cumin, the curry and 250 ml of water and cook for 15-20 minutes with the pot lid on.
Then, add the peas and salt and pepper. Stir well and continue cooking for 10 minutes.
If needed, add water. When needed, stir carefully so that the potatoes don’t get smashed.
Serve with some spearmint and olive oil on top.
