Quinoa and chicken salad

INGREDIENTS
  • 1 cup of quinoa
  • 1 chicken breast
  • 2 tablespoons of olive oil
  • 2 peppers
  • Spinach
  • a handful of rocket
  • 10 small tomatoes
  • 100gr of grated low-fat cheese of your choice.
  • Some lemon juice
  • Salt and pepper

INSTRUCTIONS

Wash the quinoa and boil it for about 13 minutes. Dice chicken and the peppers and sauté in a few drops of olive oil. Add pepper and salt at will. Wash the remaining vegetables. Mix with the rest of the ingredients. Your salad is ready!
