Chickpeas

INGREDIENTS
  • 500 gr of chickpeas
  • 4 cloves of garlic
  • 2 dry onions, sliced
  • 2 small tomatoes
  • 2 bay leaves
  • 1 cup of olive oil
  • 1 tablespoon of salt
  • ½ tablespoon of freshly trimmed pepper
  • As much water as needed

INSTRUCTIONS

Αdd the chickpeas in a bowl and cover them with water. Let them soak for 8-12 hours.

The following day strain them and put them in a roasting pan. Add the garlic, the bay leaves, a layer of chopped onions and then, a layer of chopped tomatoes. Sprinkle with salt and pepper and add the olive oil.

Add cold water until the chickpeas are covered. Place the lid on the roasting pan and bake at a preheated oven at 170 C for 3 ½ - 4 hours.
