INGREDIENTS
- 2 tablespoons of olive oil
- 2 chicken breasts, cut in stripes
- 2 dry onions, chopped
- 3 colored peppers, chopped
- Thyme
- ¼ cup of white wine
- 1 ½ cup of chicken broth
- 2 trimmed tomatoes
- 1 tablespoon of paprika
- Salt and pepper
- 1 teaspoon of parsley, chopped
- 2 tablespoons of yogurt
- 2 cups of boiled quinoa
INSTRUCTIONS
Heat the oil and add the chicken. Cook for 4-5 minutes and then add the onions, the peppers and the thyme. Sauté for 3 minutes.
Sprinkle the paprika and put out with wine. Let it boil for 2 minutes until the alcohol evaporates.
Add the tomatoes and season with salt and pepper. Add the chicken broth and let it boil for 20 minutes. After it boils, remove it from the fire and mix with yogurt and parsley.
Serve in plates with quinoa.
