Tabbouleh with lentils

INGREDIENTS
  • 400 gr. lentil flakes
  • 2 fl. puffed oatmeal
  • 2 tomatoes, in small frames
  • 3-4 fresh onions, chopped
  • 3 bell peppers, chopped
  • 1/2 bunch parsley, chopped
  • leaves from 6-7 sprigs of fresh mint, chopped
  • 1 small cucumber, chopped
  • 70 ml olive oil
  • juice of 1 lemon
  • Salt Pepper

INSTRUCTIONS

To make the oatmeal puff up, leave it in a bowl of water until it softens

In a saucepan, boil the lentils in plenty of water over medium heat until they soften

Drain them and lightly salt them. Let them cool.

In a salad bowl, mix the lentils with all the other ingredients and serve.
