INGREDIENTS
- 400 gr. lentil flakes
- 2 fl. puffed oatmeal
- 2 tomatoes, in small frames
- 3-4 fresh onions, chopped
- 3 bell peppers, chopped
- 1/2 bunch parsley, chopped
- leaves from 6-7 sprigs of fresh mint, chopped
- 1 small cucumber, chopped
- 70 ml olive oil
- juice of 1 lemon
- Salt Pepper
INSTRUCTIONS
To make the oatmeal puff up, leave it in a bowl of water until it softens
In a saucepan, boil the lentils in plenty of water over medium heat until they soften
Drain them and lightly salt them. Let them cool.
In a salad bowl, mix the lentils with all the other ingredients and serve.
