INGREDIENTS
- 1,200 g of cleaned broccoli
- 2 spring onions, finely chopped
- 2 tbsp olive oil
- 1 liter vegetable stock or water
- salt
- freshly ground pepper
- 1 cup of yogurt
INSTRUCTIONS
Heat the olive oil on medium heat and add the green onions. Cook them until they soften.
Divide the broccoli into florets and cut their stalks into small pieces. Add them to the pot. Cover the ingredients with the broth and simmer for 20 minutes to soften.
Then we grind them with the rod or in the blender and season with salt and pepper.
Serve with 1 tbsp. yogurt per serving.
