Mexican Rice

INGREDIENTS
  • 250 gr. rice
  • 400 gr. boiled red beans
  • 300 gr. boiled corn
  • 400 gr. grated tomato
  • 1 red pepper
  • 1 onion
  • 1 clove of garlic
  • 2 tsp. olive oil soup
  • Salt,
  • Pepper

INSTRUCTIONS

Chop the pepper, onion and garlic

In a saucepan, heat the olive oil over high heat and sauté the onion and red pepper until soft

Add the garlic, corn and beans and mix

Add 2 cups of water, the grated tomato and the rice

Cover and leave them on medium heat for about 20 minutes

5 minutes before it is ready, season with salt and pepper

Remove and serve
