INGREDIENTS
- 1 medium chicken
- 2 peppers
- 2 tomatoes
- 1 onion
- 1 clove of garlic
- 1 tbsp oregano
- 2 lemons in juice
- 1 tbsp mustard
- 5 tbsp extra virgin olive oil
- salt and pepper
INSTRUCTIONS
Preheat the oven to 200°C. Put salt, pepper, and oregano on the chicken, pour the lemon juice, add the mustard, garlic, olive oil and mix.
In another bowl, mix the peppers, tomatoes, onion slices, season with salt and pepper, add the remaining olive oil and mix.
Stuff the chicken with the vegetable mixture, wrap it with parchment paper and close it. Wrap in aluminum foil and place in a baking tray.
Bake for 2 hours.
